Frittata


Frittata

Makes 4 servings

Time: 40 minutes

Ingredients:

  1. 1 small or ½ sweet potato
  2. 1 cup mushroom, sliced
  3. ½ cup onions, diced
  4. 1oz goat cheese
  5. 1 small zucchini
  6. ¼ cup milk, skim
  7. ½ tsp seasoned salt
  8. ½ tbsp olive oil
  9. 6 eggs

Directions:

  1. Wash all produce and dice, slice accordingly
  2. Preheat oven to 350°F and spray a 9x8in baking dish with nonstick spray
  3. Pierce sweet potato with a fork and microwave cook for 4-5 minutes. Once cooked through, peel off the skin and medium dice.
  4. Meanwhile, heat oil in a sauté pan over medium high heat. Cook onions and mushrooms, until onions are translucent
  5. Add zucchini, cook until tender, and remove from heat
  6. Pour cooked vegetables evenly into the bottom of the baking dish
  7. In a medium bowl, combine eggs, milk and seasoned salt, mix well, and pour into baking dish
  8. Top with tomatoes and goat cheese. Bake for 20-25 minutes or until the eggs are cooked through
