Egg and Broccoli Muffins


Egg & Broccoli Muffins

Makes 1 serving

Time: 20 minutes

Ingredients:

  1. 3 large eggs
  2. ¼ cup skim milk
  3. 1 cup of frozen (defrosted) chopped broccoli
  4. ¼ cup low-fat shredded cheddar cheese
  5. Dash of seasoning salt & pepper
  6. Cooking spray

Directions:

  1. Start by beating 3 eggs, 1/4 cup of skim milk, and a bit of seasoning salt and pepper (regular salt and pepper works fine too) until well incorporated
  2. Spray the muffin tin with cooking spray
  3. Chop the defrosted broccoli and fill the mini muffin cups about halfway
  4. Add a small sprinkle of low-fat shredded cheddar cheese on top of the broccoli
  5. Spoon the egg/milk mixture into the muffin cups, filling the cups about 3/4 full
  6. Bake at 350 degrees for 12-13 minutes. Enjoy!
