Breakfast Sandwich

Makes 1 serving

Time: 5 minutes

Ingredients:

  1. 1 egg
  2. 1 whole bagel or sandwich thin
  3. 1 slice cheddar cheese
  4. 1 slice ham
  5. 6-7 spinach slices (chopped)
  6. 2 slices tomato
  7. 3 slices avocado

Directions:

  1. Toast bagel or sandwich thin
  2. Wisk 1 egg and spinach in a coffee mug
  3. Microwave for 45 seconds
  4. Place egg and the remaining ingredients on a bagel or sandwich thin

Note:

You can freeze these sandwiches. If freezing, toast sandwich or bagel thin and place cooked egg with

spinach, cheese and ham on the bagel or sandwich thin. Wrap tightly in aluminum foil and freeze. On day you would like to eat it, take out tin foil of microwave for 45 seconds on each side and add the rest of the vegetables.
