Blender Muffins


Blender Muffin

Makes 7 servings

Time: 15 minutes

Ingredients:

  1. ½ tsp vanilla extract
  2. ½ tsp baking soda
  3. 1 ½ tsp baking powder
  4. 2 tbsp honey
  5. Pinch of salt
  6. 1 cup plain Greek yogurt
  7. 2 eggs
  8. 3 ripe bananas
  9. 2 ½ cups oats
  10. ½ cup optional “Add-In”: chocolate chips, blueberries, nuts, cranberries

Directions:

  1. Prep work: Preheat the oven to 400°F lightly grease a standard muffin tin.
  2. Combine all ingredients except the “Add-In” on high in a blender, and blend until smooth.
  3. Once the batter is smooth stir in the “Add-In” by hand using a spatula.
  4. Fill muffin tin ¾ full with mix.
  5. Bake for 15 minutes or until a toothpick is inserted and comes out clean.
  6. Enjoy!
