Southwest Breakfast Burrito

Ingredients:

  1. 1 egg
  2. 1 whole wheat tortilla
  3. 3 slices avocado
  4. 6-7 spinach leaves
  5. 1/2 tsp chopped cilantro
  6. 1 tbsp salsa

Directions:

  1. Scramble 1 egg in a coffee mug
  2. Microwave for 45 minutes
  3. Place eggs, spinach, tomato, cheese, avocado, cilantro and salsa in tortilla
  4. Wrap up and enjoy
